Chutney (Green tomato)
2 to 2.5kg fruit eg 500g green toms with 2kg cooking apple or 250g dried apricots with 2kg apple 350g onion 500g dried fruit eg sultanas, raisins, dates 2 heaped teaspoons ground gi ger 2 teaspoons mixed spice 2 teaspoons dried chilli flakes 750ml to 1 L vinegar (pickling vinegar or vinegar with at least 5% acidity eg cider or red wine) 750g soft brown sugar Juice of a lemon DO NOT ADD SALT Either grate fruit and onion or use food processor but take care not to mush it Add 750ml vinegar and 120g sugar and spices Cook for 1.5 to 2 hours until chutney like Add rest of sugar and boil until dissolved. Add some of the extra vinegar if too thick Put in sterilised jars. Makes about 6 jars Ideally keep for 1 month before using
