Orzo pasta risotto for one person

Small pack pancetta or bacon rashers chopped into pieces
Olive oil
Clove of garlic, grated 
125g orzo pasta
100ml red wine
200ml water or stock
Mixed herbs 
Black pepper
Grated parmesan
Handful peas, defrosted
Other veg eg mushrooms, Brocoli, green beans if you have them Optional
Parmesan rind Optional

Fry the pancetta or bacon in oil until cooked. If using other veg eg mushrooms cook with the pancetta  Add garlic and cook for 1min
Add orzo and wine/water with the herbs and pepper.  Add parmesan rind, if using
Simmer for 10mins until orzo is soft
Add defrosted peas and heat through
Serve with Parmesan
