elderflower cordial

20 elderflower heads, remove all the stalks as they are bitter.
1kg sugar
2 lemons
2 limes

Dissolve sugar in 1250ml water
Add zest of lemons and limes 
Slice then add lemons and limes and flower heads. 
Squash down, cover and leave for 24 hours 
Squidge really well with a potato masher. 
Sieve into another bowl and then bottle in small plastic
 bottles and freeze. 
To preserve the cordial and extend the shelf life you can add 75g citric acid

Any one bottle needs to be used in about a week 

Using 1kg sugar tastes best if diluting with lemonade. If you want to dilute with water then double the sugar
