Shortbread
100g butter
100g plain flour
50g cornflour
50g caster sugar
Rub butter into the flours and sugar. This can be done in a food processor
Don't over work or the oil will come out of the butter
Gently bring the mix into a soft dough. Roll out and cut into biscuit shapes or press into a tin to make one large biscuit to be broken into pieces
