Cook up chicken

1 children jointed or pieces of chicken with or without bones
1 crushed clove of garlic
1 Sprig thyme
1/2 scotch bonnet pepper finely chopped
10 drops Angostura bitters
1/2 teaspoon Turmeric
1/2 teaspoon Allspice
Black pepper

Mix spices etc together and rub into chicken. Leave for at least 1 hour 
Scrape garlic and bits off the chicken and fry chicken until golden. Add bits and water to pan with chicken stock cube and a squirt of tomato puree. 
Cook covered in oven for 1 hour. Remove from oven and reduce fluid. Thicken fluid with cornflour. 
Taste and adjust seasoning
Serve with rice and peas.
