Marmalade my way

1 tin Mamade marmalade 
1.8kg sugar
4 oranges

Remove strips of peel from the oranges, avoiding the pith, with a canelling knife. Put in a pan of water and boil for 15mins until softened and the bitterness has reduced. Strain and discard the water.

Empty the Mamade into maslin pan.
Squeeze the juice from the oranges and add to a measuring jug. Add the peel. Wash out the tin with a little water. Make up the jug to 425ml with water/ carton OJ. Add the sugar

Slowly heat until the sugar is completely dissolved. Add a small knob of butter and bring to a full rolling boil. Boil for about 15mins, stirring occasionally. 

It is done when it reaches 104 to 105 C. Test for set on a cold plate in the freezer.
If not fully set boil for another 2 or 3 mins
Cool for 10mins to stop peel floating and put into sterilised jars
