Chocolate mousse
Serves 4
100g plain chocolate melted and cooled
Small knob of butter
Small amount instant coffee dissolved in water
1 tablespoon Amaretto/Brandy/Frangelico/Coffee liqueur
150ml double cream
Separate egg and whisk egg white until stiff. Whip the cream with the alcohol and coffee until soft peak. Add egg yolk and mix well. Mix in the melted chocolate . Fold in the egg whites
Put into ramekins or one large bowl.
Can put fruit in the bottom eg Amareno cherries or with raspberries or strawberries on top
Cam be served with almond shortbread or other crisp biscuits
