Sourdough crumpets using discard

150g unfed starter or discard
1 teaspoon  sugar
1/4 teaspoon bicarb
If the starter is very sour increase the bicarb to 1/2 teaspoon

Butter the inside of 2 silicone rings and place in a pan with a dot of butter. When the butter melts divide the discard between the rings
When the bottom is cooked ease the ring off and flip to cook the other side
