Fridge Cake/Rocky Road

225g biscuits ginger nut
175g chocolate
100g butter
100g golden syrup
50g demerera sugar
1 tablespoon cocoa powder 
75g crystallised ginger

Crush the biscuits leaving some chunkier pieces not all crumbs
Put chocolate, butter, syrup and cocoa powder in the microwave and heat until melted
Add the biscuits and stir to coat all the biscuits
Put in a lined 18cm by 28cm tin and pat down. Chill and cut into pieces

Variations
Use malted milk biscuits with milk chocolate and cherries with coconut.
You can add maltesters and decorate top with them.

For Rocky Road add mini marshmallows or cut up larger marshmallows
